It’s the middle of December and you want a cozy sweet treat. The kind that you can eat with a cup of hot chocolate, the kind that you can even eat for breakfast. For a cute and soft cookie that you may decorate yourself, here is a recipe for gingerbread man cookies. For a warm and gooey roll that you can enjoy any time of day, here is a recipe for puff pastry cinnamon rolls.
Gingerbread Man Cookies
Ingredients
~ All-Purpose Flour – 4 1/4 cups ~Ground Ginger – 1 tsp ~Ground Cinnamon – 3 tsp ~Ground Clover – 1/2 tsp ~Salt – 1 1/2 tsp ~Baking Soda – 1 tsp ~Softened Unsalted Butter 1/2 ~Light Brown Sugar – 1 1/2 cup ~Large Egg – 1 ~Hot Water – 1/4 cup ~Molasses – 2/3
Instructions
~Whisk all dry ingredients in a large bowl.
~ Mix the butter and sugar in a large bowl for 2-3 minutes – (Preferably using a stand mixer)
~ Add the egg, molasses, and hot water, and mix for another 1-2 minutes.
~Gradually add the dry ingredients in the mixer running on low speed until it’s combined.
~Chill the dough on a plastic wrap for at least two hours, or overnight.
~Preheat the oven to 350 degrees.
~Lay out parchment paper and roll the dough on said paper.
~Cut out the dough using a gingerbread man cut out.
~Roll the scraps into a ball and use until unable to anymore. Repeat.
~Transfer the cut out dough to a pan with prepared baking sheets.
~Bake for 10-12 minutes, until fully baked and puffed.
Almond Tassies
Ingredients
~ Margarine Butter
~ Flour
~ Cream Cheese
~ Almond Paste
~ Eggs
~ Sugar
~ Salt
~ Vanilla
~ Almond Extract
~ Crisco (White only)
~ Clear Vanilla
~ DreamWhip Powder
~ Butter Flavor
~ Almond Extract
~ Powdered Sugar
~ Water
Instructions
Crust
Make the crust a day ahead.
~Mix two sticks of room temp Margarine in a bowl with six ounces of Cream Cheese.
~Add two cups of flour and mix.
~Drop in mini greased tassie pan.
~Use your thumb or a tassie pusher with flour to form the crust into a bowl shape.
Filling
~ Add two eggs, 3/4 cup sugar, 1/4 tsp salt, one tsp flour, 1/2 tsp vanilla, and 1/2 tsp almond extract. Mix.
~ Rip the almond paste into pieces and put them in a bowl. Microwave for about 30 seconds.
~ Mix gradually. DO NOT OVER MIX!
~ Fill crust 1/2 full.
~ Bake 15 minutes at 350 until lightly brown.
Frosting
~Mix 1 1/2 cup Crisco, 1 tbs Clear Vanilla, 1 tsp Salt, 3 tbs DreamWhip, 3/4 Butter Flavor, and 1 tsp Almond Extract.
~Add 3 1/4 cup Powdered Sugar and 1/4 cup water, beat again.
~Frost tassies in a swirl pattern.
